Since Saint Patrick’s Day is coming up pretty quickly, you might not have anything in mind to do for the holiday. This article will help you come up with four Saint Patrick’s Day food recipes.

Cream cheese sugar cookie (12 servings):

Ingredients needed-

  • 2 tablespoons and 2 teaspoons of white sugar
  • 2 tablespoons and 2 teaspoons of butter, softened
  • ⅛ (3 ounce) package cream cheese, softened
  • ⅛ teaspoon salt
  • ⅛ teaspoon almond extract
  • ⅛ teaspoon vanilla extract
  • ⅛ egg yolk
  • ¼ cup and 2 tablespoons all purpose flour

Recipe-

  1. In a large bowl combine the sugar, butter, cream cheese, salt, almond and vanilla extracts, and egg yolk. Beat until smooth. Stir in flour until well blended. Chill the dough.
  2. Preheat oven to 375 degrees F (190 degrees C)
  3. On a lightly floured surface, roll out the dough ⅓ of a time to ⅛ inch thickness, refrigerating remaining dough until ready to use. Cut into wanted shapes with lightly floured cookie cutters. Place them 1 inch apart on ungreased cookie sheets. Leave cookies plain for frosting.
  4. Bake for 7-10 minutes in the preheated oven, or until light or golden brown. Cool cookies completely before frosting.

St. Patrick’s Day Shamrock Pie (8 servings):

Ingredients needed-

Crust-  

  • 1 ¼ cups graham cracker crumbs
  • 5 tablespoons unsalted butter, melted
  • 2 tablespoons white sugar
  • 4 large egg yolks
  • ½ cup key lime juice
  • 2 tablespoons key lime zest
  • 1 tablespoon honey

                                     

Filling-  

  • 1 (14 ounce) can sweetened condensed milk
  • 2 drops of green food coloring

 

Recipe-

  1. Preheat oven to 350 degrees F (175 degrees C) set a rack in the middle of the oven.
  2. Stir graham cracker crumbs, butter, and sugar together in a bowl until fully combined. Press the creation into the bottom and sides of a 9-inch pie plate.
  3. Bake in the preheated oven until set, about 10 minutes. Let crust cool on a wire rack; leave oven on.
  4. Whisk condensed milk and egg yolks together in a bowl until well combined. Add key lime juice and zest; mix well. Whisk in honey to combine. Add food coloring gradually, whisking until the filling is green enough for you. Pour the filling over the crust.
  5. Bake until nearly set, 16 to 18 minutes. Let it cool completely on the wire rack so the pie can set fully, at least 30 minutes. Cover and refrigerate.

Ingredients needed-

  1. 4 (1 ounce) squares unsweetened chocolate
  2. 1 cup margarine, softened
  3. 2 cups white sugar
  4. 3 eggs
  5. 2 1/2 teaspoons vanilla extract
  6. 1 cup all-purpose flour
  7. 1/2 cup butter, softened
  8. 4 cups confectioners’ sugar
  9. 2 tablespoons milk, or as needed
  10. 1 1/2 teaspoons peppermint extract
  11. 6 drops green food coloring
  12. 1 1/3 cups semisweet chocolate chips
  13. 6 tablespoons butter
  14. 1 tablespoon vanilla extract

Recipe-

  1. Preheat the oven to 350 degrees F (175 degrees C). Grease a 9×13 inch baking dish.
  2. Melt the unsweetened chocolate in a cup or small bowl in the microwave. Stir at 15 second intervals until chocolate is smooth. Allow to cool slightly. Transfer to a large bowl, and stir in the margarine and sugar until smooth. Beat in the eggs one at a time, then stir in the vanilla. Stir in the flour just until blended. Pour the batter into the prepared dish and spread evenly.
  3. Bake in the preheated oven until the surface appears dry and the sides are beginning to pull away from the edges of the pan, 20 to 25 minutes. The brownies may look more like cake and may jiggle slightly in the center- this is normal. Remove from the oven and cool in the pan set over a wire rack.
  4. To make the middle layer, beat 1/2 cup of butter with confectioners’ sugar in a large bowl using an electric mixer. Add milk as needed to get a spreadable consistency. Stir in the peppermint extract and green food coloring. Spread this over the cooled pan of brownies. Refrigerate for 30 minutes
  5. In a microwave-safe bowl, microwave chocolate chips with the butter until melted. Stir every 20 seconds until chocolate is smooth. Stir in vanilla and then pour over the chilled brownies and quickly spread to cover the surface. Cool again until firm, about 10 minutes, then cut into squares and serve.

Soda Bread (12 servings):

Ingredients needed-

  1. 3 cups all-purpose flour
  2. 1 tablespoon baking powder
  3. 1/3 cup white sugar
  4. 1 teaspoon salt
  5. 1 teaspoon baking soda
  6. 1 egg, lightly beaten
  7. 2 cups buttermilk
  8. 1/4 cup butter, melted

Recipe-

  1. Preheat oven to 325 degrees F (165 degrees C). Grease a 9×5 inch loaf pan.
  2. Combine flour, baking powder, sugar, salt and baking soda. Blend egg and buttermilk together, and add all at once to the flour mixture. Mix just until moistened. Stir in butter. Pour into prepared pan.
  3. Bake for 65 to 70 minutes, or until a toothpick inserted into the bread comes out clean. Cool on a wire rack. Rap in foil for a while for the best flavor.
